Crock-Pot Chicken Jambalaya

Especially for Susan and Kelly!

Adapted from Leanne Ely's Saving Dinner

4 boneless, skinless chicken breast halves, cut into 1 inch cubes
1 pound turkey kielbasa, sliced
1 can diced tomatoes, undrained
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 cup chicken broth
1 tsp oregano
1 tsp Cajun seasoning
1/2 tsp cayenne pepper
1 onion, chopped
3 stalks celery, chopped

Coat bottom & sides of crock pot with a thin layer of olive oil. Put everything in - chicken first! - and turn on low for 7 hours. Before serving, cook up 5-6 servings of rice using chicken broth in place of water. Mix cooked rice into the crock pot and enjoy!
